Mix the Flour and Water

Mix the flour, water, and salt in a bowl and knead until you get a homogeneous dough. Divide the dough into balls about the size of a ping pong ball and, using a press, make fairly thick tortillas (5 to 7 mm thick).

Lightly Toast the Tortillas

Lightly toast the tortillas on a hot griddle or pan with a layer of oil on both sides for 45 to 60 seconds per side. A light crust should form on the tortilla, but it should still be raw on the inside.

Remove the Tortillas and Shape

Remove the tortillas and let them cool for a few minutes, just enough to be able to handle them. At that moment, using your index finger and thumb, pinch the edges to give volume and height to the border of the tortilla.

Fry in Plenty of Oil

Fry the sopes in plenty of hot oil for half a minute per side. Remove them and let them cool a bit.

Assemble and Serve

Then it is just a matter of assembling the sopes, usually starting with a layer of refried beans and adding the selected ingredients on top. Sopes are ready to be served, and it is customary to eat them by hand.
