Prepare Breading Stations

Dry the fish fillets very well with absorbent paper and season them on both sides with salt and pepper. In a deep bowl, beat the two eggs with an extra pinch of salt.

P.A.N. Crunchy Mix

In another large container, mix the P.A.N. Precooked Yellow Corn Flour. with oregano, thyme and cayenne pepper. This spiced flour mixture will be the key to the flavor.

Breading

Pass each fish fillet first through the beaten egg, draining off the excess, and then pass it through the P.A.N. Flour mixture, pressing gently so that the flour adheres very well to the entire surface.

In a large skillet, heat plenty of oil over medium-high heat. Fry the fillets for about 4 to 5 minutes per side (depending on thickness) until the corn crust is golden brown and irresistibly crispy.
