Directly from the state of Zulia, mandocas are iconic fried donuts made of ripe banana, white cheese, papelón and P.A.N Flour. The combination of the saltiness of the cheese with the sweetness of the banana and the papelón creates an explosion of unmatched flavors in every bite.

Preparation Steps

The Papelón Syrup

In a pot, place the water and the paper over medium heat until it is completely dissolved and a light honey (aguamiel) is made. Let cool completely.

Form the Base Dough

Pour the paper water (now cold) into a large container and add the P.A.N White Precooked Flour. little by little while stirring. Add the ripe banana puree and knead well for a couple of minutes.

Add Cheese and Anise

Add the grated white cheese (salty for contrast) and anise seeds to the dough. Knead for 2 more minutes until everything is integrated. Let the dough rest covered for about 5 minutes.

Assemble the Mandocas

Divide the dough into 18-20 equal portions and shape into small balls. Stretch them on the counter, rubbing with your hands until you obtain elongated cylinders (like band-aids). Bring the ends of each strip together and gently press them together to form a ring or teardrop shape.

Fry

Fry in plenty of hot oil over medium heat. Carefully turn them until they are golden brown on both sides and crispy. Remove them and let them drain on absorbent paper.
