Preparation Steps
Cook the Sweet Potato
Parboil the peeled sweet potato in a pot with water and salt until very soft. Drain, puree, and let cool completely.
Prepare the Coconut Milk
If you make it homemade: blend the coconut pulp with hot water and strain the mixture. Reserve the milk and bagasse (wet grated coconut) separately.
Make the Dough
Add the P.A.N. Cachapa Flour, the coconut milk and a little of the grated coconut left over from straining to the cold mashed sweet potato. Knead well and let the mixture rest for a couple of minutes so that the flour absorbs the moisture.
Assemble the Fingers
Take portions of the dough, flatten them slightly in your hand, place a stick of mozzarella cheese in the center and close them, shaping them into a little finger or cylindrical croquette.
Special breading
Dip the armed fingers in a little more dried Cachapa Flour mixed with grated coconut to create a crispy crust.
Cooking
Fry them in plenty of oil or cook them in the Airfryer until they are golden brown and the cheese melts inside.
