In a large bowl, mix the Harina de Maíz Blanco Precocida P.A.N., cornstarch, baking soda, and baking powder. Then, sift the mixture and set aside.

In another bowl, vigorously beat the eggs, then gradually add the buttermilk, along with the sugar, salt, cinnamon, and vanilla. Mix all the ingredients well. Next, gradually add the flour mixture and stir until a homogeneous batter is obtained.

Incorporate the melted butter into the batter and continue beating until all ingredients are well combined.

Cook the Pancakes

Grease and heat a griddle or pan over low heat. Using a ladle, pour the batter onto the hot griddle. Cook until small holes appear on the surface of the pancakes. Then, carefully flip them to cook the other side until golden brown.
