On a baking tray, place the onion, bell pepper and cherry tomatoes. Season with salt, pepper and approximately two tablespoons of olive oil. Mix well and bake for 15 minutes at 180°C or until the vegetables are tender. Set aside.

Divide the dough into 6-8 equal portions, form balls of dough and flatten them with the palms of your hands to make 10-12 cm discs.

On a griddle over medium heat, cook the arepas for 5 minutes per side.

Open one side of the arepas with a knife and fill each one with a portion of the vegetables, another of cheddar cheese and a generous portion of chicken. Finish by adding your favorite sauce.
