Making cookies without wheat flour has never been easier. This recipe for oatmeal, chocolate and raisin cookies uses P.A.N. Flour. to give structure to the dough, resulting in a delicious dessert, high in fiber and ideal for a snack or children's lunch box.

Preparation Steps
Cream the Butter
Preheat the oven to 170°C. With the help of an electric mixer or manually with a balloon whisk, beat the butter together with the sugar until creamy. Add the vanilla, add the egg and continue beating until well combined.
Mix the Dry
In the same mixture, add the P.A.N. Precooked White Corn Flour, the baking soda and the salt.
Add Stumbles
Add the oats, the chocolate drops and finally the raisins. Mix everything with a paddle until the ingredients are evenly distributed in the dough.
Shape
Place spoonfuls of the mixture on a baking tray (previously greased or lined with waxed paper), 4 cm apart. Gently flatten them to form a flat cookie.
Bake
Bake at 170° C for 15 minutes or until you see them brown on the edges. Take them out and let them cool on a rack to harden.
